I make this Apple Cake with Maple Cream Cheese Frosting quite often as it was a hit with my family since the first bite.

It is such a simple Apple Cake recipe and when ever we have red apples in the kitchen, you can be sure this cake will be baked.

We normally buy Golden Delicious or Granny Smith as those are our everyday favorites. Grab one on the way out and our lunch is halfway sorted out. My son loves fresh fruit and I try to buy a variety at a time.

The red apples I only buy for baking, never been on the favorite list for eating as is, but most certainly the apple to use for cakes and muffins.

The Maple Cream Cheese Frosting is also a straightforward recipe and goes so well with the Apple Cake !

I rarely use any other type or flavored frosting, because why mess with a winner, anyhow !

But do be careful, too much and it will leave an after taste which is not what you want.

Ingredients

CAKE:

  • 3 1/4 cups Flour
  • 1/2 t Ground Cinnamon
  • 1/4 t Salt
  • 1/2 t Baking Powder
  • 1 1/4 t Baking Soda
  • 1/2 cup Vegetable Oil
  • 1 1/4 cup Caster Sugar (Superfine Sugar)
  • 1 t Vanilla Essence
  • 2 large Eggs
  • 4 Red Apples, cored, peeled and cubed small
  • 2 Egg Whites, beaten stiff

FROSTING:

  • 1/2 cup Butter
  • 3/4 cup Muscovado Sugar, packed
  • 1/3 cup Maple Syrup
  • 250g Cream Cheese, plain, softened ( 8 oz )
  • 1/2 cup Walnuts, chopped

Instructions

1.) Pre-heat the oven to 180 deg C (350 deg F) – line a 20cm (8 inch) deep spring form cake pan with baking paper

2.) Sift together the Flour, Cinnamon, Salt, Baking Powder and Baking Soda in a large mixing bowl

3.) Beat together the Oil, Caster Sugar, Vanilla and Eggs – stir in the Apples

4.) Fold Apple mixture into the dry ingredients

5.) Gently fold in the beaten Egg Whites – pour batter into the prepared pan and bake 1 1/2 hours or until a tester comes out clean – cool in pan

6.) Remove from pan and transfer to a serving plate

7.) Frosting: Beat together the Butter, Sugar and Syrup – add the Cream Cheese and beat until smooth – spread over cake and down the sides – sprinkle with Walnuts

This recipe sounds wonderful..I just have a question..what is Caster Sugar and Muscovado Sugar?..I live in a tiny rural town in the Pacific NW, USA and I've never heard of these, and haven't a clue of where to even find them..I could use some help with this please ;) Thanks! ~Benita~

Hi Benita, Caster sugar is finer than plain sugar but not as fine as powdered sugar and Muscovado is a dark, moist sugar which you can replace with any dark sugar with a moist texture. I get ours in SA in the Sugar aisle and some stores keep these particular sugars in their baking aisles as well {replying here as your e-mail is not attached to your comment}
