Chia seeds are all the rage now and I have finally, after weeks of searching!, found one lonely packet, stuck way in the back of the shelf at our local supermarket, to use in a recipe – of course I had to try it in a dessert first 😉
The Chocolate Coconut Chia Pudding is delicious and so quick to make.. pity about the chilling time, but we can not have it all.
I looked at other recipes to try and get the whole how-to etc on the Chia Seeds, but the recipes out there range from complicated to easy, a few hours chilling time to overnight, basically the same recipe but double the seeds, baked goodies to no-bake desserts, and so the list carried on.
I am happy to use this recipe again, but am also looking forward in experimenting with savory dishes, muffins and really whatever else looks interesting, as the list for Chia seeds being healthy is quite impressive. You can google “Chia Seeds” and will immediately see hundreds of recipes, health benefits and all.
