CHOCOLATE COVERED COOKIE CARAMELS
1.) Place the Condensed Milk, Butter, Brown Sugar and Syrup in a medium saucepan – bring to the boil and reduce heat – simmer, while stirring continuously, 10 – 12 minutes or until caramel in color – remove from heat and cool for 5 – 7 minutes.
2.) Meanwhile, line a 20 x 20cm dish with baking paper – place a single layer of cookies on the bottom.
3.) Pour the caramel over the layer of cookies and top with another layer of cookies – chill for an hour or until set.
4.) Remove from the refrigerator and cut into your preferred size – cubes, rectangles or however you want to.
5.) Quickly dip the chilled pieces in the White Chocolate and place on a piece of aluminium foil – sprinkle over your choice of Sprinkles and place back in the refrigerator until the chocolate has set.
