Chicken in Peanut Butter Sauce

I love savory dishes with Peanut Butter, but do not make it that often as I have a certain {not always, but now and then} picky eater who does not like Peanut Butter in any other way, than on bread.
Roy and I were busy painting the other day, and by the time I looked at the time, it was already past dinner time.  So, I grabbed my little recipe book, published by a magazine group, and found this quick chicken recipe which I adapted.
The chicken was ready just before the rice had finished cooking in my rice cooker, which is very quick. I served this dish over Basmati rice with a crunchy green salad on the side.


{4 – 6 portions}
1/2 cup Milk
1/2 cup Crunchy Peanut Butter
4 t Sesame Oil
1 Green Bell Pepper, sliced
250g Mushrooms, sliced 
500g Chicken Fillets, cut into large chunks
1.) Heat the Milk until just warm – add the Peanut Butter and mix well – keep aside.
2.) Saute the Green Bell Pepper and the Mushrooms in the Sesame Oil until soft – remove from pan and keep aside.
3.) Using the same pan, fry the Chicken chunks until just about done – season lightly with Salt – add half of the Peanut Butter Sauce and simmer for 5 minutes.
4.) Add the Green Bell Pepper and the Mushrooms back to the pan with the Chicken together with the remaining Peanut Butter Sauce – simmer a further 5 minutes.
Serve over rice with salads or vegetables on the side.

  1. Sounds wonderful! I am known for being an extremely patient person – except in one area – picky eaters! Can't handle it, drives me nuts. So I commend you for your understanding of your picky peanut butter eater, lol.
