Sugar Donut Muffins

3/4 cup Sugar
1 Extra-Large Egg
1 1/2 cups Cake Flour
2 t Baking Powder
1/4 t Salt
1/4 t Nutmeg
1/4 cup Vegetable Oil
3/4 cup Buttermilk
1 t Vanilla
3 TB Butter, for rolling
3/4 cup Sugar, for rolling
1.) Pre-heat oven to 180 deg C (350 deg F). Spray a 12 hole muffin pan with Spray ‘ Cook.
2.) In a large bowl, beat the Sugar and Egg until light in color.
3.) In a separate bowl, sift the Cake Flour, Baking Powder, Salt and Nutmeg.
4.) Add the dry ingredients to the Egg mixture – stir to combine.
5.) Add the Oil, Buttermilk and Vanilla – stir until just combined – do not overmix.
6.) Spoon into the prepared muffin pan – Bake 15 – 18 minutes until the edges are browned and a tester comes out clean. – Remove from oven.
7.) As soon as the muffins are out of the oven, melt the Butter, roll each muffin in the butter (covering all sides) first and immediately after in the Sugar.
Transfer to a wire-rack and let cool completely.
