These Cheesy Pepperoni Bars are serious stuff, you guys !  Talk about addicting … none of us could stop eating until all the pieces were gone.

Tastes like a bite of pizza, but the texture is so much different, deliciously different. Do not get me wrong, my pizza love is just as strong as before, but these Bars gives you a smooth, gooey and chunky bit of delight.

I wait a few extra (additional to the 5 – 10 minutes as below) to slice the Pepperoni Bars. This gives the Cheese just enough time to set properly without running all over the show when I slice them – which did happen the first time.

Should you be fortunate enough to have any leftovers, these are perfect to serve cold as well, and make them ideal to pop into a lunch box.

Not all that crazy over Cheese ? You can easily half the amount of Cheese, or use a milder Cheese.

But keep in mind that something like Gouda, which is a very soft Cheese, will melt quicker and you might need to wait even longer before cutting into Bars.

My favorite go-to brand for just about any kind of cheese is Lancewood (no affiliation) – they have an outstanding range !

These Bars are perfect to add to a savory platter at a party, or whilst watching the game.

And if you need to take something with to a gathering, yep, these travel very well, and you can re-heat them in the microwave for a minute or two and they will still have that just baked, fresh taste.

Ingredients
  

  • 1 ½ cups Flour
  • 2 cups Milk
  • 2 Eggs lightly beaten
  • 250 g Cheddar Cheese cubed ( 8 oz )
  • 250 g Pepperoni sliced, chopped ( 8 oz )
  • 1 t Dried Italian Herbs
  • ½ cup Mozzarella Cheese grated

Instructions
 

  • Pre-heat the oven to 180 deg C (350 deg F) – spray a 20 x 30cm ( 8 x 12 inch ) oven dish with cooking oil
  • Combine all the ingredients, except the Mozzarella, in a mixing bowl – pour mixture into the prepared oven dish
  • Sprinkle over the Mozzarella Cheese and bake 30 – 35 minutes or until golden and set
  • Let cool 5 – 10 minutes, slice and serve

Rea, I have made them with Ham before and also a mix of meats, but we like Pepperoni or Salami, it is really your own preference :-)
