If I have to choose between brownies and blondies, I would most definitely always choose a blondie. Gulp… ! Did I just make any enemies? But first, try these Chocolate Almond and Cherry Blondies and then we can talk again, right 😉

I have been craving for a sweet, chewy – but not too chewy! – treat for a couple of days now. And finally decided to whip up a batch of these Blondies.

Seeing as my daughter and her boyfriend had also returned from their vacation the same day, and had dinner with us, it seemed like great timing.

My son is home during the week (mostly) and my daughter comes to visit for a day or two over the weekends.

Now, that makes it quite difficult for me deciding when to go all out, not only with dinner, but also dessert and other sweet treats.

They do try to give me advance notice of their plans and whether they will be home for dinner, but every now and then their plans change.

And then hubby and I are sitting with food to feed an army, and no army to feed. Yes, I know, leftovers are sometimes even better the next day.

But the next day, I might have 4 – 6 mouths to feed and I never have that much leftover from the previous day.

Anyhow, my point is, I now only make sweet treats if I know for certain that the kids will be home and these Chocolate Almond and Cherry Blondies are way too delicious to keep some for the next day.

Without shame, I am telling you, hubby and I will finish the whole batch by ourselves ! And that’s not a good idea, not at all !

So, what is so wonderful about these Blondies ? First … White Chocolate ! And I just love Almond Slivers in a dessert (you can use Pecans if you prefer), and of course the Cherries.

If that does not sound convincing, yet,,, these Blondies are just chewy enough to be called chewy and the top is absolutely heavenly with the dots of Jam baked into the Blondies.

** Note: I ran out of Light Brown Sugar and had to use half Light and half Demerara, hence the darker color of my Blondies.

Ingredients
  

  • ¾ cup Unsalted Butter
  • 2 ½ cups Light Brown Sugar see note in post
  • 2 cups Flour
  • 1 t Baking Powder
  • ¼ t Salt
  • 180 g White Chocolate chopped, good quality ( 6.5 oz )
  • ¾ cup Almond Slivers
  • ¾ cup Glace Cherries chopped
  • 3 extra-large Eggs
  • ½ TB Vanilla Essence
  • cup Cherry Jam ( smooth Jelly )
  • ¼ cup White Chocolate melted. to drizzle ( optional )

Instructions
 

  • Pre-heat the oven to 180 deg C (350 deg F) – line a 20 x 30 ( 8 x 12 inch ) baking dish with baking paper
  • Place the Butter and Sugar in a small saucepan – heat and stir until the Butter has melted – no need for the Sugar to dissolve – remove from heat and set aside
  • Sift together the Four, Baking Powder and Salt – stir in the Butter/Sugar mixture and mix (the mixture will be very lumpy)
  • Add the White Chocolate, Almonds and Cherries – stir through
  • Whisk together the Eggs and Vanilla – stir into the batter and mix until just combined – pour into the prepared baking dish
  • Place dollops of the Jam (Jelly) on top of the batter – bake 40 – 45 minutes or until done
  • Remove from oven, let cool completely in the pan
