Miniature food is just so much more fun ! I love tiny, pop-in-the-mouth sweet and savory bites and these One Bite Pecan Tassies are just perfect.

I think my love for bite-sized food stems from platters. You can have a huge variety of snacks on a single platter and have a taste of them all.

Without feeling “full” after one (or maybe two!) slices of cake, pie or whatever else.

Now, I am most definitely not one to say no to a big slice of moist chocolate cake, or a slice of rich cheesecake!

But I am definitely a platter kind of person myself when we entertain, or just as a treat for the family over a weekend.

I used to surprise the kids every now and then with a savory platter. And “maybe” a smaller platter of sweet treats – after school.

Small treats, which I usually also tried to keep on the healthy side and not too rich as we have always had dinner fairly early. Never past 7pm anyway.

Leftover Tassies ?

And if there are leftovers, I would wrap those up and pop them into their lunch boxes for the next day. Nowadays, since they are all grown up and working/studying, they mostly just tell me that they’ll grab something at work.

My son would however take any leftover food and or dessert if he remembers in the morning. He is not one to pack lunch at night.

But, I can tell you that there are never any of these one bite Pecan Tassies left, even when I double the recipe ! They’re like a box of popcorn, you know, you just have to finish it all 😉

Ingredients
  

  • 1 cup Packed Brown Sugar ( I use Demerara Sugar )
  • ½ cup Butter melted
  • 2 large Eggs
  • 1 t Vanilla Essence
  • ½ cup Flour
  • 1 cup Pecan Nuts finely chopped
  • 40 Pecan Nut Halves **see note below

Instructions
 

  • Pre-heat oven to 190 deg C (375 deg F) – spray mini muffin pans with cooking oil
  • Beat together the Brown Sugar, Butter, Eggs and Vanilla until the mixture thickens – add the Flour and beat another 30 seconds until well combined
  • Stir in the chopped Pecan Nuts and spoon into the prepared pans – fill each muffin hole about 3/4
  • Top with Pecan halves {or quarters} – bake 8 – 10 minutes until golden and slightly puffed
  • Remove from the oven – let cool a minute in the pan – transfer to a cooling rack and cool completely

Notes

  • Pecan Nut Halves - or use quarters – halves are a bit heavy and tend to sink into the batter

I made these and they turned out fantastic! Sort of like a cross between a cookie and a dense muffin. I ended up with 55 tassies, even though I didn't underfill my mini muffin cups. 9 minutes in the oven seemed to be the sweet spot. To get them out of the pan, it's important to let them cool for 2-3 minutes first (otherwise they'll stick to the sides). I found it helpful to slide a toothpick around the edges of each cup to gently loosen them from the pan. My pecan halves did indeed sink, but it works best to just lightly set them on top of each tassie - no need to press them in at all. Thank you for sharing this recipe! I'll be making them again.
