Apple Strudel Muffins

I love Apple Strudel but lack the patience to make them from scratch, therefore I usually end up buying some from the bakery. Traditional strudels are made of flaky pastries, with a delicious cinnamon apple filling.

Now, these Apple Strudel Muffins really fall under those recipes which are marked or known as "Magic" delicacies. The whole crust - bottom and sides - are formed .. well, magically ! by itself. Almost like a self-crusting pie.

It might not be the prettiest muffins, but let me assure you, these Apple Strudel Muffins are just the thing when you are craving an Apple Strudel. The Muffins do not have a flaky crust, but instead a soft, almost dough-like outer layer.

And if that is not all - the same dough-like deliciousness is spread throughout the Muffin with all the Apple cubes in between.

If I did not find this recipe on the Yuppiechef website, I would never even have looked at it twice, but seeing as I trust all Yuppiechef's recipes {and products, by the way!}, I had to try this magic recipe and oh my, I was definitely not disappointed !

If you can get past the flaky pastry, you will absolutely love this recipe for these Apple Strudel Muffins. The kids asked whether the muffins were actually small miniature sized Apple pies !

APPLE STRUDEL MUFFINS

12 Large Muffins

INGREDIENTS:

2 Apples, peeled, cored and diced
3 TB Lemon Juice
1 cup Dark Brown Sugar {I use Muscovado}
3 Eggs
1/2 cup Butter, melted
1 t Vanilla
2 cups Flour
2 t Baking Powder
1 t Cinnamon
1 t Salt
1/2 cup Pecan Nuts, coarsely chopped

TOPPING:

1/4 cup Butter, softened
1/4 cup Dark Brown Sugar {I use Muscovado}
1 cup Flour
2 TB Pecan Nuts, coarsely chopped

DIRECTIONS:

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a 1 hole muffin pan with cooking oil.
2.) Place the diced Apple in a small mixing bowl - sprinkle with Lemon Juice to prevent discoloration - keep aside.
3.) Beat together the Brown Sugar, Eggs, Butter and Vanilla until well combined - add the Apple.
4.) Sift together the Flour, Baking Powder, Cinnamon and Salt - stir into the Apple mixture together with the Pecan Nuts {do not over mix}
5.) Fill each muffin hole 3/4 with the Apple batter.
6.) Topping : Mix together the Butter and Brown Sugar - add the Flour and Pecan Nuts - mix until well combined {if a little too dry add more Butter - it should resemble wet beach sand}
7.) Spoon the Topping over the batter in the muffin pan - pressing down lightly - bake 25 - 30 minutes until golden brown.

Best served warm with whipped cream, ice cream or custard.
