This recipe for Quick Beef Tips with Vegetables, is exactly what I mean - quick ! And it tastes as if you had it on the stove for hours.
To make this an even better meal, it is also low in fat. As long as you cut away all visible fat, that is.
We still have cool nights in South-Africa - even after a day of intense heat - and I love to serve this quick Beef Tips with Vegetables for dinner on those nights. Truthfully, I make this dish during Summer as well.
My family loves the deep, rich taste which develops so quickly and all you need to serve it with, is some rice, or mashed potatoes if you'd prefer. I do serve a small crunchy side salad with it, but only on days when I have time to make something extra.
Serves : 4
1 TB Light Olive Oil
500g Rump or Sirloin Beef, cubed
Salt and Black Pepper, to taste
1 Onion, cut into wedges
1 Green Bell Pepper, cut into large pieces
1 Red Bell Pepper, cut into large pieces
2 TB Water
3 TB Tomato Puree
1 t Dried Basil
1 t Garlic Seasoning
1/4 cup Water
Cooked Brown Basmati Rice, to serve
1.) Heat the Oil over high heat - season the Beef with Salt and Black Pepper - cook Beef until done to your preference - remove Beef from the pan and keep aside.
2.) Add the Onion and both Peppers to the pan - saute 3 minutes or until tender - add the 2 TB Water - lower the heat and cook another minute, stirring continuously.
3.) Add back the Beef together with the Tomato Puree, Basil, Garlic and 1/4 cup Water - bring back to the boil, stirring for 1 - 2 minutes.
Serve warm with Brown Basmati Rice and a salad on the side.
