I have made these low-fat Tarragon Meatballs in mushroom sauce so many times over the years and only realized recently that I have never shared the recipe on the blog.

The Meatballs itself are so full of flavor, but it is definitely the Mushroom Sauce which makes this dish so special and you would never guess it is low in fat.

I chop the Mushrooms to a fine, breadcrumb-like texture and then cook them - fantastic result ! And as a bonus, kids who do not like Mushrooms, would never even know they are eating {and enjoying!} a delicious Mushroom Sauce.

We like this dish served over pasta with a salad on the side, but it is equally delicious, served over rice or with mashed potatoes.

LOW-FAT TARRAGON MEATBALLS IN MUSHROOM SAUCE

Serves :   4

INGREDIENTS:

MEATBALLS:

500g Lean Ground Beef
1 Onion, grated
1/2 cup Fresh Wholewheat Bread Crumbs
1 Egg
1 t Dried Tarragon
Salt and Pepper, to taste
2 TB Olive Oil

MUSHROOM SAUCE:

250g Mushrooms, finely chopped  {I blitz them for a few seconds in a food processor}
2 cups Low-Salt Beef Stock
1 t Cornflour
1 TB Milk
3 TB Tomato Puree
1 TB Lemon Juice
1 TB Brown Sugar
Salt and Pepper, to taste

DIRECTIONS:

1.) Place the Beef, Onion, Bread Crumbs, Egg, Tarragon, Salt and Pepper in a mixing bowl - mix well and shape into 12 meatballs.
2.) Heat the Oil in a large pan {with a lid} - gently brown the meatballs, turning regularly. Remove from the pan using a slotted spoon, drain on kitchen paper and keep aside.
3.) Add the Mushrooms to the same pan - cook until softened and fragrant - add the Beef Stock.
4.) Dissolve the Cornflour in the Milk in a small mixing bowl - add the Tomato Puree, Lemon Juice, Brown Sugar and season with Salt and Pepper - mix and add to the Mushrooms.
5.) Lower heat, cover the pan and simmer 5 minutes - carefully place the meatballs in the Mushroom Sauce - continue to simmer, covered for 20 - 25 minutes.

Best served over pasta with Fresh Tomato wedges.
