Crispy Mango Pork Chops

I might have mentioned before that our family love pork chops ! Cooked in just about any way, we would never say no. These crispy Mango Pork Chops are tender and juicy on the inside and crispy on the outside.

The Mango adds a delicious sweet taste to the Pork Chops - sweet, salty, tender, juicy ... not much more needed other than a baked potato {with maybe whipped sour cream?} and a crunchy salad for a delicious dinner.

I have made these Pork Chops with peaches before as well, but I prefer the Mango. Maybe I should mention that Mangoes are also one of my most favorite fruits ! Pity they are not available throughout the year.

Whether you decide to use peaches or mangoes, I hope you enjoy this recipe as much as our family does.

CRISPY MANGO PORK CHOPS

4 - 6 Servings

INGREDIENTS:

5 TB Honey
3 Mangoes, peeled and cubed 
1/2 cup Orange Juice, divided
2 TB Olive Oil
2 TB Butter
6 Pork Chops
Salt and Black Pepper, to taste

DIRECTIONS:

1.) Heat the Honey in a pan over medium heat - add the Mangoes - stir-fry 1 minute - add half of the Orange Juice and let simmer until the Mangoes are only just tender - remove from pan and set aside.
2.) Add the Oil and Butter to the same pan - season Pork Chops, both sides, cook until done, turning over frequently - transfer to serving plates.
3.) Return the Mangoes to the pan - add the remaining Orange Juice - simmer 2 minutes to deglaze the pan.

Serve the Mangoes and sauce over the Pork Chops with Baby Potatoes, sides and/or salads.

  1. I have always had peaches with pork chops...so mangoes sound like a yummy change of pace. I'm not sure when they are in season here, but I'll ask my grocer!
