Scrambled Eggs, Chorizo and Nachos Brunch

We are not big on eating early breakfasts, but we are a kind of Brunch family. And with brunches, you do not need to stick to the more "acceptable" breakfasts.

For instance, would you have Nachos at 6 or 7am in the morning? Well maybe, but that is a little much for me ;-)  I prefer this scrambled Eggs Chorizo AND Nachos Brunch served a bit later in the morning, or even late afternoon as an early dinner.

Most everything in this meal is made in the Chorizo leftover oil, which gives an extra taste to the scrambled Eggs.

The Red Onion and the Chili adds a kick to this very Mexican-ish brunch. Do add more Chilies if you prefer, it only adds more taste and more kick.  One Chili is however more than enough for us. And the Chorizo and Nachos on the side make the whole meal quite spicy already.

SCRAMBLED EGGS CHORIZO AND NACHOS BRUNCH

Serves : 4 - 6

INGREDIENTS:

1 t Olive Oil
150g Chorizo, thinly sliced
1/2 Red Onion, finely chopped
1 Green Chili, chopped
12 Eggs
1/2 cup Fresh Cream  {double cream}
Salt and Pepper, to taste
1/2 cup Cheddar Cheese, grated
125g Nachos {or Dorito's}

DIRECTIONS:

1.) Heat the Oil in a large pan - fry the Chorizo until crispy - remove with a slotted spoon and keep warm.
2.) Using the same pan with the Chorizo fat - saute the Onion and Chili until soft.
3.) Beat together the Eggs and Cream - season with Salt and Pepper - pour over the Onion/Chili mixture and leave 1 minute - gently scramble until done.
4.) Serve the Scrambled Eggs topped with the Cheddar, with the Chorizo crisps and Nachos.

Hint : Use the Nachos to scoop up the scrambled Egg, place a Chorizo crisp on top and take a bite - delicious !

  1. We brunch on weekends although the little two have something earlier then our brunch is their lunch. There is nothing better than chorizo YUM
