I am sharing a recipe with you today which Roy and I usually have when it is just the two of us home for dinner. We normally have this healthy Grecian Pork only with Pita fingers and a small salad.

For some reason, when the kids are not home, we tend to snack quite a bit during the day and smaller meals like this is perfect for dinner. One would think it should be the other way around.

It could also be because I did not allow snacking before dinner whilst the kids were still at school - nowadays ... well, we eat how, when and what we like. Maybe not that healthy all the time {guilt talk here ;-) } and that could be why I really throw in a healthy meal here and there, and not only for health reasons as I'd like to think !

But, don't get me wrong, I still cook  up a storm when one or both of the kids are home, and I do try to keep it as healthy as I can .. mostly...

Anyhow, the Pork cubes are so tender and I could almost say melt-in-the-mouth as well. It is not a very saucy dish, but enough to use the Pita fingers and scoop up to enjoy with the Pork. You could also just stuff everything into the whole, sliced open Pitas.

HEALTHY GRECIAN PORK

Serves : 4

INGREDIENTS:

2 TB Light Olive Oil
750g Pork Fillet {Tenderloin}, cubed
2 t Garlic, crushed
1 t Coriander Seeds, crushed
4 cups Spinach, chopped
2 t Wholemeal Flour
1 t Plain Flour
2/3 cup Fat-Free Plain Yoghurt
Salt and Black Pepper, to taste

DIRECTIONS:

1.) Heat the Oil in a large pan {with a lid} - fry the Pork for 5 minutes, stirring to brown evenly.
2.) Add the Garlic and Coriander - cook on medium heat for 10 minutes, stirring regularly.
3.) Add the Spinach, stir and cook 5 minutes.
4.) Combine the Flours and Yoghurt - add to the meat - heat until boiling - season to taste with Salt and Pepper.
5.) Cover the pan and simmer 10 minutes.

Serve with Wholewheat Pita fingers and a salad or two.
