Spiced Mango Parfaits

This is such a tropical dessert and best of all - it is low-fat !  It is a quick and easy recipe so you only need minutes to get this ready.

The Spiced Mango Parfaits has whipped low-fat evaporated milk instead of whipped cream, which means it must be enjoyed shortly after they are prepared.

Unfortunately, evaporated milk does not last as long when whipped, but, seeing as I am really, really missing my desserts, I do not mind making these {and as I mentioned - it only takes a couple of minutes!} and serve them straight after.

SPICED MANGO PARFAITS

4 - 6 Servings

INGREDIENTS:

2 Mangoes, peeled and cubed
1 t Ground Ginger
2 cups Greek Fat-Free Yogurt, plain
1 cup Low-Fat Evaporated Milk
1 TB Icing Sugar
4 TB Brown Sugar
2 TB Toasted Coconut Flakes

DIRECTIONS:

1.) Sprinkle the Ginger over the Mango cubes - toss lightly.
2.) Whip the Evaporated Milk and Icing Sugar together until fairly stiff - fold this into the Greek Yoghurt.
3.) Place a layer {one third} of Mango in the bottom of a serving bowl or individual glasses - add a layer {one third} of the whipped Cream/Yoghurt - sprinkle with one third of the Brown Sugar - repeat layers.
4.) Top with Toasted Coconut Flakes and serve immediately.
