Meatball Nacho Salad

I have an amazing and very filling recipe for you today. It is a Meatball Nacho Salad and perfect for lunch or as a light dinner, therefore, do not let the salad part throw you off ;-)



We had this for dinner the other night and everyone was very impressed, especially after they thought I was about to feed them lettuce leaves only ! As most of you know {I'm sure!}, one of the regular, daily questions asked by the family is "what is for dinner?" Right? Yes, definitely in our house, and when I only replied with a Salad their faces dropped immediately, but were followed with the usual "and for dessert?"

I can now tell you that we had a delicious dessert afterwards, but all everyone was raving about, was this delicious salad !

I found the recipe on one of our local magazines' website, but have adapted the recipe a bit.

MEATBALL NACHO SALAD

INGREDIENTS:

500g Beef Sausages
2 TB Olive Oil
2 cups Cherry Tomatoes - 1 cup left whole and the other cup sliced in half
1 Red Bell Pepper, sliced thinly
1 Green Bell Pepper, sliced thinly

125g Nachos or Doritos
2 Handfuls of torn Lettuce
2 Avocados, sliced

2 t Lemon Juice
2 TB Olive Oil
Salt and Freshly Ground Black Pepper, to taste

Greek Yoghurt, to serve

DIRECTIONS:

1.) Remove the meat from the Sausage casings and form small meatballs - heat the Olive Oil and cook the meatballs until done - remove the meatballs from the pan and keep the remaining pan oil.
2.) Line a baking sheet with aluminum foil - arrange the meatballs, Tomatoes and Peppers on the baking sheet - pour the retained pan oil from the pan over the meatball/vegetables.
3.) Place the baking sheet under the oven's grill element {not too close - the center would do} - grill for 15 minutes or until the whole Tomatoes start to burst open and the Peppers are slightly softer - turn the meatballs and vegetables over after the first 10 minutes.
4.) Start layering the salad on a serving dish in the following order : Nachos/Doritos, Lettuce, grilled Meat and Vegetables and arrange the Avocados on top.
5.) Mix the Lemon Juice and Olive Oil - drizzle over the salad - season to taste with Salt & Pepper.
6.) Serve with Greek Yoghurt on the side.
