Luscious Lemon Pie

Light and zesty with just the right sweetness added to this amazing lemon pie !

This Luscious Lemon Pie is easy to make, using everyday ingredients, yet it is sophisticated enough to serve at a posh dinner gathering, or as in our case - for the family ;-)


Many years ago, around two decades to be more exact, I bought a recipe book, solely based on the recipe photo on the front cover. My intention was to make that precise recipe first ... however, it took me two decades to make it for the first time !

Not that I never used the recipe book, I have made numerous recipes from it, but this Lemon Pie, bookmarked and all, were pushed back every single time. Ever happen to you? Buy a recipe book because of the cover and then take so long to get to the actual recipe ?

Now that I have finally got around to making this pie, I would most certainly make it more often. The original recipe had a specific homemade crust, but you should know by now that I like things the easier way, and why not .. I use a frozen pastry made by a brand I have come to love over the years.

LUSCIOUS LEMON PIE

INGREDIENTS:

1 Roll Frozen Short-Crust Pastry, defrosted
2 TB Flour
1 cup Caster Sugar
4 Eggs, lightly beaten
2 Lemons, juice and grated peel
Almond Flakes, to decorate

DIRECTIONS:

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a 22cm pie dish with cooking oil.
2.) Unroll the Pastry and roll out a bit thinner to fit inside and up the walls of the pie dish - cut off any excess pastry, prick a few times with a fork and chill for 10 minutes.
3.) Meanwhile, mix the Flour and Caster Sugar in a medium mixing bowl - add the Eggs, Lemon Juice and grated Peel - mix until just combined {do not over mix}.
4.) Pour the filling into the prepared pie dish and bake 40 - 50 minutes or until the filling has set.
5.) Remove from the oven - let cool completely - decorate with the Almond Flakes and serve.
