Coconut Bran Muffins

Now and then I do actually make a bit of a healthier sweet treat, believe it or not. Bran is not high up with my family and I do not really blame them as I have experimented with so many recipes with bran as an ingredient which simply tasted yuck.

These Coconut Bran Muffins on the other hand were an immediate hit, even the doggies got one to share ! Fortunately for them {unfortunate for us humans!}, I thought I had some raisins, but when I was already halfway with the recipe, I discovered I had none. FYI - raisins and grapes are bad for dogs.

Not the end of the world, the muffins still turned out delicious and moist, which was great, as bran tend to make baked goods a little dry.

I made a very soft coconut icing which worked great with the muffins - just that extra bit of moistness as well.


12 Large Muffins


1 Egg
3/4 cup Brown Sugar
3/4 cup Vegetable Oil  {I used Sunflower}
1 cup Milk
1 t Vanilla Essence
1/4 cup Coconut
1 1/4 cup Wholewheat Flour
1 t Bicarbonate of Soda
1 cup Digestive Bran
1/4 cup Raisins  {optional}

50g Butter, softened
1/2 cup Icing Sugar
2 TB Coconut
1/2 TB Milk
1/2 t Vanilla Essence
1/4 cup Sprinkling Nuts


1.) Pre-heat the oven to 160 deg C (325 deg F) - line a 12 hole muffin pan with cupcake liners or muffin cups.
2.) Beat together the Egg and Sugar until creamy - add the Oil, while beating continuously until well combined - stir in the Milk and Vanilla - set aside.
3.) Mix together the Coconut, Flour, Bicarbonate of Soda, Bran and Raisins {if using} - fold into the Egg mixture.
4.) Spoon the batter into the muffin liners/cups - bake  25 - 30 minutes until cooked and risen - remove from the oven and let cool completely.
5.) ICING: Beat together the Butter and Icing Sugar - stir in the Coconut, Milk and Vanilla - scoop onto the muffins and sprinkle with Nuts.

  2. Wow! These look lovely and I love the idea that there is a little bran in there to alleviate my guilt for eating something yummy!

  3. How much would my boys love me in winter if they walked to school with one of these warm from the oven in their cold hands...I'd be best Mum ever. Pinning for winter :)
