Ever had cauliflower couscous? Delicious !  Now, I won't lie to you and say it will become a family favorite - Roy and Dimitri are the Steak-meaty-kinda-guys and they were not much impressed to have this for dinner.

However, both agreed it would make an awesome lunch or even a side {to what??}, but no way they want it for dinner again. I, on the other hand thought this was the most delicious Tuna salad I have ever had - see they noticed only the vegetables, especially the cauliflower whereas I had seen and tasted it for the full value, which is Cauliflower Couscous and Tuna Salad as a whole.

Also, this is most definitely the healthiest meal I have made in months and seeing as I need to start watching what I eat, I will definitely make this again - even if it is just for Cheri and myself {I know she would love this!}

CAULIFLOWER COUSCOUS AND TUNA SALAD

INGREDIENTS:

500g Cauliflower Florets
250g Mini Italian Tomatoes, halved
1 Yellow Bell Pepper, cut into strips
1/4 cup Balsamic Vinegar
Salt & Black Pepper
1/4 cup Parsley, chopped
2 cans (170g each) Tuna in Water, drained and flaked


1/4 cup Lemon Juice
1/2 cup Basil Leaves
1 t Garlic, crushed

DIRECTIONS:

1.) Pre-heat the oven to 180 deg C (350 deg F) - Line a baking sheet with aluminum foil.
2.) Place the Cauliflower in a food processor and process until it resembles couscous - keep aside.
3.) Place the Tomatoes and Pepper on the foil lined baking sheet - drizzle with the Balsamic Vinegar and season to taste with Salt and Pepper - bake 150 minutes until soft.
4.) Tip the roasted Tomatoes and Pepper into the bowl with the Cauliflower {the pan juices as well}.
5.) Add the Parsley and Tuna and stir through - transfer to a serving dish.
6.) Blitz the Lemon Juice, Basil and Garlic in the food processor or using a stick blender - drizzle over the salad and serve.
