Korean Beef & Cheese Quesadillas

 These Quesadillas are filled with meat, veggies and of course cheese. Two slices with a salad or two {or any sides} makes a delicious dinner.

Quick and easy too !  The initial prepping and frying do take a little time, but you can do this long before dinner time and once you are ready to serve, just pop them into the oven until it is heated through, light brown and the cheese is bubbly.

Our family loves Quesadillas and I am not sure why I do not make them more often. The fillings could really be anything you want to add with the most simple being a filling consisting of any kind of cooked meat, chicken and most definitely cheese !

If you are not a fan of Spinach {or have picky eaters}, simply leave it out.

Korean Beef & Cheese Quesadillas

  • 1 TB Sugar
  • 4 TB Thick Soy Sauce
  • 2 TB Balsamic Vinegar
  • 3 t Garlic & Ginger Paste
  • 400g Thin, Short Beef Strips
  • 2 TB Sesame Oil
  • 1 Onion, chopped
  • 1 Small Red Bell Pepper, chopped
  • 2 Spring Onions, chopped {white & green parts}
  • 3 cups Spinach, chopped
  • 2 cups Cheddar Cheese, grated
  • 4 Large Tortillas
  • Olive Oil, to brush
  • Extra Spring Onions, chopped - to garnish {optional}
  1. Pre-heat the oven to 200 deg C (400 deg F) - line 2 baking sheets with baking paper. {Pizza pans also work great!}
  2. Mix together the Sugar, Soy Sauce, Balsamic Vinegar and the Garlic/Ginger Paste.
  3. Place the Beef strip in a marinade container - pour the Soy Sauce mixture over and let marinate at room temperature for 30 minutes. 
  4. Heat the Sesame Oil in a large saucepan - cook the Beef strips until done - remove from pan and keep aside.
  5. If needed add a little more Oil to the saucepan - saute the Onion, Red Bell Pepper and Spring Onions until soft - add the Spinach and stir-fry until wilted - add back the cooked Beef and heat through.
  6. Brush two Tortillas with Olive Oil and place them, oiled side down, on the prepared baking sheets.
  7. Sprinkle one cup of Cheddar Cheese on each Tortilla, spreading over the surface but not too close to the edge.
  8. Divide the Beef mixture in two and scoop over the Cheese layer.
  9. Top with the remaining Tortillas - brush the tops with Olive Oil - bake 10 minutes or until heated through, golden and the Cheese has melted.
  10. Cut each Quesadilla into quarters - garnish with extra Spring Onions and serve.
