I love anything Country Club, sandwiches, salads and especially this Country Club Chicken which is served over pasta. The dish can also be served with rice.

It is a very filling dish and can easily feed 6 – 8 people. When I put the recipe together on paper, it looked just right for about 4 servings, but boy, was I wrong !

The bacon and cheese make the dish very rich and filling and even though the quantities look on the scant side, it is not.

Next time you need to feed a crowd (especially if you have teenagers with friends over!) this is the perfect dish to make. I have never come across anyone not liking the Country Club Chicken.

It is in fact now one of the most requested chicken recipes.  Not only from my family, but even when we have an informal dinner with friends.

What I love most, and you will too if you are anything like me, is that only one skillet is used to cook all the ingredients ! Less dishes – bonus !

Ingredients
  

  • 250 grams Bacon Bits ( 8 oz )
  • 3 Large Chicken Fillets cubed
  • Salt and Black Pepper to taste
  • 2 TB Unsalted Butter
  • 250 grams Mushrooms sliced ( 8 oz )
  • Bunch Spring Onions chopped {white and green parts}
  • cup Dry White Wine ( optional )
  • 1 can 400g Cream of Mushroom Soup, ( 14 oz )
  • 1 can 400g Cream of Chicken Soup, ( 14 oz )
  • 1 ½ cups Mozzarella Cheese grated

Instructions
 

  • Cook the Bacon until crispy in a large skillet – remove with a slotted spoon and keep aside
  • Season the Chicken with Salt and Pepper – Using the same skillet and bacon drippings, cook the Chicken until done – remove and keep aside – drain the liquid from the skillet
  • Melt the Butter (same skillet) – saute the Mushrooms until soft – add the Spring Onions – fry another 1 minute – add the Wine (if using) and both cans of soup – stir to combine
  • Add the Chicken and 3/4 of the Bacon – heat over medium heat
  • Add the Mozzarella Cheese – stir and cook until the Cheese has melted and is bubbly
