Smothered Chicken

I have pinned this recipes months ago already and thought it was about time I tried it.  The original recipe can be found HERE .

It looks like a lot of work and a little complicated, but it really is not.  Think of it more as a mains with two sides all mixed into one deliciousness.

The dish was an immediate hit, as we love creamed spinach and sauteed mushrooms in general - combine that with chicken and a few other ingredients and you have a winner !

I have barely changed anything about the original recipe, but I will put it in the order which I made each portion.


  • 4 - 5 Chicken Fillets {about 1 kg}, cubed - 2.5 x 2.5 cm {1 inch x 1 inch}
  • 2 TB Garlic Powder
  • 2 t Seasoned Salt
  • 1 t Pepper 
  • 2 TB Olive Oil
  • 3 TB Red Onion, chopped finely
  • 400g Spinach, roughly chopped
  • 2 t Garlic, crushed
  • 125g Cream Cheese, plain
  • 1/4 cup Parmesan Cheese, grated
  • Salt & Pepper, to taste
  • 3 TB Butter
  • 2 TB Olive Oil
  • 250g Mushrooms, sliced
  • 2 t Garlic, crushed
  • 1/2 cup White Wine
  • Salt & Pepper, to taste
  • 3/4 cup Mozzarella Cheese, grated
  1. Pre-heat the oven to 180 deg C {350 deg F} - spray a large oven dish with cooking oil.
  2. Place the Chicken in the prepared oven dish - sprinkle with Garlic Powder, Seasoned Salt & Pepper - stir to cover all - bake 15 minutes.
  3. Start the Creamed Spinach - Heat the Olive Oil over medium heat in a large saucepan - saute the Red Onion for 3 minutes - add the Spinach and Garlic - cook until wilted - add the Cream Cheese and the grated Parmesan Cheese - cook until the cheeses have melted - season to taste with Salt & Pepper - keep aside.
  4. Begin the Sauteed Mushrooms - Heat both the Olive Oil and the Butter over medium heat - saute the Mushrooms until soft - add the Garlic and cook another minute - Add the White Wine and cook until almost dry - season to taste with Salt & Pepper - keep aside.
  5. Remove the Chicken from the oven - spoon the Creamed Spinach and the Sauteed Mushrooms over - sprinkle with the Mozzarella Cheese - bake another 15 - 20 minutes until the Cheese has melted and the Chicken is done.

Serve over mashed potatoes with a salad or two.
