Lemon Cheesecake {No-Bake}

Lemon Cheesecake {No-Bake} ~ No-Bake Lemon Cheesecake in jars are perfect ~ topped with a melted mallow and it is a winner ! #Cheesecake #LemonRecipe #NoBakeDessert

I had some Lemon Curd leftover from a previous recipe and thought I'll whip up some quick, no-bake Lemon Cheesecakes for dessert the other night.

These were extremely quick to prepare, but as usual with cream cheese recipes, it needs some time to set. I made mine during the day, popped them into the refrigerator and after dinner I added the Marshmallows and placed it under the grill.

LEMON CHEESECAKE {NO-BAKE}

Ingredients
  • 1 1/2 cup Tennis Biscuit Crumbs (or any sweet biscuit crumbs)
  • 1/3 cup Butter, melted
  • 250g Cream Cheese, softened
  • 1/2 cup Lemon Curd
  • 1/2 t Vanilla Essence
  • 1/2 cup Icing Sugar
  • Extra Biscuit Crumbs, to sprinkle
  • 2 Large Marshmallows, halved
  • Honey, to drizzle
Directions
  1. Combine the Biscuit crumbs and the melted Butter - press into the bottom of small 1/2 cup size jars or dessert bowls.
  2. Place the Cream Cheese, Lemon Curd, Vanilla and Icing Sugar in a large mixing bowl - beat until well combined and smooth.
  3. Scoop the mixture on top of the Biscuit crusts.
  4. Sprinkle with extra Biscuit Crumbs and place in the refrigerator for 2 hours.
  5. Top each dessert with half a Marshmallow - place under the oven grill for a minute or two until browned and slightly puffed - remove from under the grill and gently press down on the Marshmallow.
  6. Drizzle with Honey and serve.
