Colossal Cheese Cornburger

A Burger patty large enough for the whole family ! Stuffed with cheese, corn, green onions.... awesome, just awesome.Roy asked about dinner earlier that day, Dimitri, as he got home after work - both received the same answer ~~ A Burger Patty ~ to which {both} they responded, "only a burger patty?" and me "Yes, and we have to share one!" Of course I got that strange look from them both, but by now they know somethings up and I like teasing them anyway !

Since I started blogging, it has taken my family months to adjust to all sorts of new things I try. {they are still adjusting on a daily base, by the way}

Crafting - they're not allowed to throw anything away, without clearing it with me first.

Cooking/Baking - they never know what to expect ! The question used to be "what is for dinner?" now it is "are we having blogfood or normal food for dinner?" But once I dished up and they tasted it,,,, love at first bite ! I even got suggestions, as what to stuff the burger with next !

I found the original recipe HERE but have adjusted it slightly.


6 - 8 Servings 


1 Extra Large Egg, beaten lightly
1 cup Whole Kernel Corn, cooked
1/2 cup Cheese Crackers, crushed
1/2 cup Green Onions, chopped
1/4 cup Parsley, chopped
2 TB Worcestershire Sauce
1/2 cup Mozzarella Cheese, grated
1/2 cup Cheddar Cheese, grated


1 kg Lean Ground Beef {Mince}
1 1/2 t Salt
1/2 t Pepper
1 t Dried Italian Herbs

1.) Pre-heat the oven to 180 deg C (350 deg F) - line a large baking sheet {or a pizza pan} with baking paper.
2.) Combine all the ingredients for the filling in a medium mixing bowl - set aside.
3.) Place all the ingredients for the burger in a large mixing bowl - mix well to combine {hands works best!}
4.) Divide the meat into two - place a piece of wax paper on the work top - form a flat round patty of even thickness throughout {about the same size as a medium pizza} - place the prepared baking dish, upside down, over the formed patty, flip over and peel off the waxpaper. The bottom half of the patty is now on the baking sheet.
5.) Spoon all the filling over the half of patty, leaving a 2 cm {1 inch} border all round.
6.) Use the same method as in #4 to form the second half of the patty - flip over the same way, covering the filling - seal the edges of the meat by pinching it closed.
7.) Bake for 45 - 60 minutes or until the juices run clear and the meat is fully cooked. Remove from the oven, let stand 5 minutes and cut into wedges. Serve with sides, salads, fries, biscuits - just about anything you want !
