Thick Coconut Hot Chocolate (Lactose-Free)

I do not have a big variety of favorite drinks. Coca-Cola is my first and last drink of the day, no matter the weather or season, but during the evening I like to have a thick Coconut Hot Chocolate.

Almost certainly think I am with Coca-Cola as other people are with Coffee, Tea or even Energy drinks, in the sense of must-haves or should I say “necessity” ?

But, now and then, I do actually put my Cola aside for some other delicious treat.  Vanilla Tea is one of my monthly drinks and of course this Hot Chocolate recipe which I am sharing with you today !

This drink is so thick and creamy !

I might have written a poem about it, if I had any idea at all on writing poems, which, fortunately, I have zero knowledge of.

Fortunately, because I really do not want to lose any of you because of reading a horror paragraph or ten.

Thick Coconut Hot Chocolate (Lactose-Free)

I like to keep a little of the mixture aside to drizzle over after the Marshmallows have been added. The recipe is also Lactose-Free.

Ingredients
  

  • 1 can 400 grams Coconut Milk, "Lite" ( 14 oz )
  • 3 TB Cocoa Powder (heaped spoonfuls)
  • 2 TB Water
  • 1 t Vanilla Essence
  • Sugar to taste
  • Mini Marshmallows to top

Instructions
 

  • Heat the Coconut Milk in a medium saucepan
  • Mix the Cocoa Powder with the Water to form a paste – add to the Coconut Milk together with the Vanilla and Sugar
  • Heat through – pour into tall serving glasses and top with Marshmallows
