Amazing, simple Pasta main dish which is perfect for weekdays or a lazy weekend meal.

This dish is very tasty and is enough for 8 large servings, which is perfect for bigger families and it is easy to only make half the recipe if you so wish.

More often, than not, it is only Roy and I for dinner.  Dimitri might or might not have dinner at home - sometimes, he let me know, other times he leaves me up to guessing !  But, most of the time he tries to let me know in advance.

I made the full recipe a couple of nights ago, which was a good thing as Jacobus also dropped in.  We had more than enough and I offered him some, which he at first declined ... but, I guess when Dimitri heated his plate, the smell was just too good to pass up and he enjoyed some with us !  I take that as a good sign !

TEX MEX ZITI

8 Servings

500g Ziti   {or other Pasta}
2 TB Olive Oil
1 Onion, chopped
500g Lean Ground Beef  {Mince}
3 cups Pasta Sauce    {your favorite will do}
500g Ricotta Cheese, crumbled
2 cups Cheddar Cheese, grated {divided}
Salt & Freshly Ground Black Pepper
2 TB Parsley, chopped
  1. ) Pre-heat the oven to 180 deg C (350 deg F) - spray a 20 x 30cm oven dish with cooking spray.
  2. ) Cook Pasta as per the instructions on the packet.
  3. ) Meanwhile, heat the Olive Oil in a large pan - saute the Onion until soft - add the Ground Beef - cook until done.
  4. ) Drain the Pasta when done and place in a large bowl - add the cooked Beef, Pasta Sauce, Ricotta Cheese and 1 cup of Cheddar Cheese - stir well to mix - season to taste with Salt & Black Pepper.
  5. ) Transfer to the prepared oven dish - bake 20 minutes - remove from the oven - sprinkle with the remaining Cheddar cheese - return to the oven and bake for another 10 minutes or until the Cheese has melted.
Remove from the oven, sprinkle with Parsley and serve with a side or a salad or two.
