Spiced Pumpkin Bites

Soft, gooey Pumpkin center, wrapped in a deep-fried batter and covered in Icing Sugar.  Almost like candy, take my word !

I had some cooked Pumpkin leftover and had no idea as what to do with it, until this idea struck me. Never made it before, or even had something close to it.

But, boy-oh-boy ! Way past delicious - even picky eater, Dimitri enjoyed them, and that's good enough for me - if he likes something, chances are, most people would.

The only drawback on this is, we had 2 or 3 leftover, but the next morning the fried outer had gone all soggy. 

Therefore, not something to make too long ahead of serving, and also not a great idea to keep for tomorrow's lunchbox treat.


18 portions

Oil, for deep-fry
1 cup Flour
1 t Baking Powder
Pinch of Salt
1 cup Cold Water
2 cups cooked Pumpkin, well drained and mashed {you must be able to form balls with them}
1/4 cup Caster Sugar
1 1/2 t Pumpkin Spice
Icing Sugar
  1. ) Sift together the Flour, Baking Powder and Salt in a medium mixing bowl - add the Cold Water and stir until smooth {it's a slightly runny batter}
  2. ) In a separate bowl, mix together the Pumpkin, Caster Sugar and Pumpkin Spice - form balls using your hands {as you would meatballs} - chill for 10 - 15 minutes.
  3. ) Heat the Oil - using a tablespoon, dip each Pumpkin ball gently into the batter and straight into the hot Oil - cook until golden brown, turning regularly {about 2 minutes per batch} - place on paper towel to drain and immediately roll in Icing Sugar afterwards.
Serve immediately or if you prefer the bites a little colder, serve within 3 - 4 hours.
