Lemon & Berry Cheesecake {NO-BAKE}

Today I am sharing with you a cheesecake recipe which I made using a baking sheet, thinner than a usual slice of cheesecake, but so much easier to eat with the hands.

The recipe will give you about 24 squares which is quite a lot and as it is a really sweet treat, I'd make it the same way again.

I have used Blackcurrent Jam but you can really use any jam you prefer.

LEMON & BERRY CHEESECAKE {NO-BAKE}

24 Servings

1 packet (200g) Tennis Biscuits     {or Graham Crackers}
2 tubs (250g each) Cream Cheese, plain, softened
1 can (397g) Sweetened Condensed Milk
2 TB Gelatin, plain
4 TB Cold Water, in a small microwavable bowl
1/2 cup Lemon Curd
3 TB Berry Jam   {any kind - I have used Blackcurrent}

1.) Line a baking sheet with baking paper - place a layer of Biscuits at the bottom.
2.) Beat together the Cream Cheese and Condensed Milk until smooth and creamy.
3.) Sprinkle the Gelatin over the Cold Water and wait until it gets spongy - microwave 10 - 15 seconds until dissolved and clear - add to the Cream Cheese, {whilst still beating} - beat until well combined.
4.) Spoon 3/4 of the Cream Cheese mixture over the layer of Biscuits - add the Lemon Curd to the remaining 1/4 Cream Cheese and mix well.
5.) Swirl the Cream Cheese/Lemon Curd mixture over the plain Cream Cheese.
6.) Drizzle the Berry Jam over and run a fork through gently.
7.) Chill until set   {about 2 - 3 hours}

Slice and serve.
