Parmesan & Peas Alfredo

With A Blast: Parmesan & Peas Alfredo       #dinner #pasta #alfredo

We have always enjoyed pasta dishes. I think most people do, looking at all the various recipes around - either a dish to be served with pasta or a one-pot dish with pasta as the main ingredient.

There are so many different variations of Alfredo recipes around, but this one was a first for me. I found it in one of our local magazines and the addition of peas interested me immediately.... so, I've tried it and now I can share it with you - delicious !  Otherwise I would never think of sharing it, right?!

I did adapt the recipe a bit to suit our taste.


4 - 6 servings

500g Spaghetti
250g Bacon Bits
1 TB Olive Oil
1 can (380g) Evaporated Milk
1/4 cup Butter
1/2 cup Parmesan Powdered Cheese {or very finely grated}
1 cup Frozen Peas, thawed
Salt & Freshly Ground Black Pepper, to taste

1.) Cook the Spaghetti according to the instructions on the packet.
2.) Meanwhile, fry the Bacon in the Olive Oil until crispy - keep aside.
3.) Bring the Evaporated Milk to the boil in a large pot - add the Butter and Parmesan - stir until melted and smooth.
4.) Add the Peas and the cooked Spaghetti to the Milk mixture - stir and heat through - season to taste with Salt & Black Pepper.

Transfer the Spaghetti mixture to a serving dish - top with the cooked Bacon and serve !
