Mini S'Mores Cheesecakes {No-Bake}

These mini cheesecakes each has about 4 bites of heavenly, creamy deliciousness !  And I'm not even mentioning the s'mores and the chocolate topping yet ! That's added delight ;-)

One of the blogs I followed even before I started my own blog is HOOSIER HOMEMADE and I have been stalking Liz and Doug ever since.  If you don't know them - get to know them !  Their site has the most delicious, awesome looking treats around.  There is even a special CUPCAKE section amongst many other recipes, party decor and general helpful tips.

Anyhow, a couple of days ago, I spotted a recipe for these mini cheesecakes pinned to one of my boards and decided to make them a.s.a.p.  You can have a look at the original recipe HERE and I can almost promise you, you will stay a while and check out the site :-)

I had to make one or two small changes to what I had available:

MINI S'MORES CHEESECAKES {NO-BAKE}

12 Servings

1 1/2 cups Biscuit Crumbs  {Tennis/Graham etc}
4 TB Butter, melted
250g Cream Cheese, softened
1/2 cup Caster Sugar
1 cup Fresh Cream   {whipping cream/double cream}
48 Mini Marshmallows or 12 Large cut into 4 pieces each
Chocolate, crumbled roughly   {I used Peppermint Crisp}

1.) Combine the Biscuit Crumbs and the melted Butter - add more Butter if necessary {the crumbs must hold together} - add 2 TB per paper cup - press into the bottom.
2.) Cream together the Cream Cheese and Caster Sugar.
3.) Beat the Fresh Cream until stiff peaks form - fold gently into the Cream Cheese.
4.) Spoon the Cream Cheese mixture into the crust lined cups - chill for at least 3 hours to set.
5.) Just before serving :  Top with the Marshmallows and the Chocolate - place under the oven's grill element - keep an eye on the cheesecakes as the Marshmallows puff up and brown quickly.  {mine took around 25 seconds}
