Apple & Potato Salad

We eat potato salad at least once every two weeks.  It is one of our favorite salads, and I think most people has their own, or a family, recipe which they make regularly.


Usually we would have the potato salad mixed in with some boiled eggs and such, but now and then, I like to make something different.

This salad recipe I am sharing with you today, is new to me. I found it in a magazine and at first I thought, no way, this does not even sound remotely to what we normally have or like.

But I had to go and test it and must say I am so impressed that this one might become our new favorite potato salad from now on !

APPLE & POTATO SALAD
8 servings

500g Baby Potatoes, cooked and cooled
2 Granny Smith Apples, cut into matchsticks
1/2 cup Italian Parsley leaves
2 Celery sticks, finely chopped
1/2 cup Greek Style Yoghurt
1/4 cup Mayonnaise
2 TB Dijon Mustard
Freshly Ground Black Pepper

1.) Toss together the Potatoes, Apple sticks, Parsley and the Celery.
2.) Mix the Yoghurt, Mayonnaise and Mustard - season with Black Pepper - pour over the salad ingredients and mix.

Transfer to a serving bowl, chill until it's time to serve !

  1. I never would have thought to combine apples and potatoes in a salad - but I know I have tried a few of your dishes and loved them so I bet this would be no different :) Pinning this too!
