Gooey Ganache Filled Cookies

I had no clue as to what to name these delightful little sweet treats, but in the end stuck to what it really is -- Gooey Ganache.

You may ask, what that is - according to me it is a ganache which is not creamy as it should be for a topping, but it is a ganache all the same ... just gooey !  Am I making any sense here?

I found this recipe in one of my favorite monthly magazines which is part of one of our major supermarket stores. The name used in the magazine did not make much sense {to me, anyway}, so I made up my own name.

The filling in these cookies is rich and it is sweet ! But, my most picky eater approved and I think that's a great plus for this one.

300g Biscuits, single layer type   {Tennis, Graham - anything not too sweet}
1 1/2 cups Brown Sugar
1 can (380g) Evaporated Milk
2 TB Butter
16 Large {regular sized} Marshmallows
180g Dark Chocolate  {I used Albany which is not as sweet as Milk Chocolate}


1.) Line a baking sheet with aluminium foil - place a single layer of Biscuits on the bottom.
2.) Place the Brown Sugar, Evaporated Milk, Butter, Marshmallows and Chocolate in a LARGE pot - heat over medium heat until everything is melted and it starts to boil - cook, stirring now and then, for about 6 - 8 minutes until thick and glossy - Remove from heat and let cool about two hours.
3.) Pour mixture over the layer of Biscuits on the baking sheet - top with another layer of Biscuits - chill until set.

Cut, using a sharp, hot knife and serve !

ps:  If you want a neater cookie - after cooling chill the filling for 2 - 3 hours - then spread on a Biscuit and top with another one {the filling will set more on chilling, but make sure it does not go too thick because you won't be able to spread it}

Hope you enjoy - but be warned - sweet or not, you will want more !
