Coconut Banana Fitters & Vanilla Lime Syrup

About time I share a Coconut recipe again!  This has a tropical taste to it, which I of course love. I have found the recipe in a magazine recently and already made it 3 times {i.e. it's good!}

It is very simple to make, but do prepare the syrup at least an hour or two before serving as it needs to cool down completely.

The fritters can be served with ice-cream or whipped cream - I opted for whipped cream as it is a little too cold in our neck of the woods for ice-cream on some nights.

We enjoy these fritters warm or cold, delicious both ways !


{6 servings}


1 cup Caster Sugar
2 TB Golden Syrup   {or corn syrup/honey}
1/2 cup Water
Lime Peel of two {2} Limes, grated
Lime Juice of four {4}Limes
1 Vanilla Pod, split


1/2 cup Self-Raising Flour
1/2 cup Cornflour
1/3 cup Coconut
Pinch Salt
1/2 - 3/4 cup Ice Cold Soda Water

Oil, for deep-frying
4 Bananas, peeled and cut into 2.5cm pieces   {not ripe - rather green}

Vanilla Ice-Cream or Whipped Cream, to serve

1.) Heat all the ingredients for the SYRUP in a small pot over low heat - once the Sugar has dissolved - boil syrup for 5 minutes - remove from heat and cool completely  {remove the Vanilla Pod just before serving}
2.) Mix the Flour, Cornflour, Coconut and Salt - add just enough Soda Water to make a lumpy, runny BATTER.
3.) Heat the Oil over medium heat - dip the Banana pieces in the Batter and deep-fry a few at a time until golden and crispy.

Serve the Coconut Banana Fritters, drizzled with the Vanilla Lime Syrup, with Ice-Cream or Whipped Cream.
