Cauliflower,Ham & Cheese Souffles

Souffles must be one of the most delicious dishes around! I love the airiness and lightness with each bite. The recipe, I am sharing with you today, has all this wonderful light souffle on top and cauliflower and ham in the bottom.

Look at that ! Looks delicious? It most certainly is ... But as you know, a Souffle is impatient - if you don't serve them within minutes, they will fall flat. {see my 1st photo ..mm, I took too long with the photos - that was about 10 minutes since I removed it from the oven} It does not really affect the taste, but most definitely the texture.

Make sure your people are in place when you serve these Souffles ;-)

CAULIFLOWER, HAM & CHEESE SOUFFLES

6 - 8 servings  {depending on your ramekin size}

300g Cauliflower Florets
1/4 cup Butter
250g Thinly sliced Ham, cut into small pieces
1/4 cup Flour
2 cups Milk
Salt & Freshly ground Black Pepper, to taste
6 Egg Yolks, beaten
2 1/2 cups Cheddar Cheese, grated
1/2 TB Dijon Mustard
6 Egg Whites

1.) Pre-heat the oven to 180 deg C (350 deg F}
2.) Cook the Cauliflower in lightly salted water until just tender - drain.
3.) Spray 6 - 8 ramekins with cooking spray - divide the Cauliflower among the bowls and add the Ham to each ramekin as well.
4.) Melt the Butter in a small saucepan - add the Flour and stir until a paste has formed - remove from the heat and stir in the Milk - whisk until smooth - return to the stoveplate - continue beating until the sauce starts to boil - remove from the heat - season to taste with Salt & Black Pepper - gradually whisk in the Egg Yolks - stir in the Cheddar and the Mustard.
5.) Beat the Egg Whites until stiff - fold into the mixture gently - Spoon into the ramekins {over the Cauliflower & Ham} - bake 15 minutes until puffed and golden brown.

Serve immediately with one or two salads and a dinner roll.
