Ricotta & Tomato Pasta Bake

If you have a large family or have people over, this is the perfect dish to serve. And we know most people love pasta dishes, which of course is also very filling.

You can make this a meat-free meal by omitting the ground beef if you so prefer. Me, I want meat in my food, but well, that's only me. Also, my family would think I have gone totally off my rocker if I serve them something without meat or at least seafood for dinner.

RICOTTA & TOMATO PASTA BAKE

{6 - 8 servings}

1 TB Olive Oil
500g Lean Ground Beef  {Mince}
3 cups Fresh Spinach, chopped
1 can Tomatoes, chopped
Salt & Black Pepper, to taste
500g Ricotta Cheese
1 Egg
1 TB Lemon peel, grated
1 1/2 cups Mozzarella Cheese, grated  {divided}
500g Spaghetti, cooked

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a large oven dish with cooking spray.
2.) Heat the Olive Oil in a medium pan - add the Ground Beef and cook until done - add the Spinach and the Tomatoes - cook until the Spinach has wilted {about 2 minutes}- season with Salt & Pepper - remove from heat.
3.) Combine the Ricotta Cheese, Egg, Lemon peel and 1 cup of the Mozzarella Cheese in a medium bowl - set aside.
4.) Place half of the cooked Spaghetti in the bottom of the prepared oven dish - spoon half of the Ricotta mixture over the Spaghetti followed by the Meat/Spinach mixture.
5.) Spoon over the remaining Spaghetti and the other half of the Ricotta mixture - sprinkle the rest of the Mozzarella cheese over - bake for 30 - 35 minutes until golden brown.

Serve with a salad or two.
