Raspberry White Chocolate Cheesecake Squares

Although we have Strawberries available most of the time {bar 3 weeks in mid-Winter}, we do not have that luxury with other types of berries.

So, the other day when I saw large containers of Raspberries in the supermarket, I grabbed some as quick as possible.

I had something in mind, but went searching on BHG's site as well, where I found a recipe I liked {more or less} - did some adapting and these delicious squares were the end result.

* You can make your own favorite sweet crust, buy a ready-made or whatever you prefer.

RASPBERRY WHITE CHOCOLATE CHEESECAKE SQUARES

{15 portions}

1 packet (250g) Tennis biscuit crumbs     {see * above for alternatives}
1/2 - 3/4 cup Butter, melted

200g White Chocolate, melted
250g Cream cheese, plain, softened
1 box Vanilla Instant Pudding
2 cups Milk
1/2 cup Fresh Cream, beaten stiff
2 cups Fresh Raspberries, keep them whole
White Chocolate shards/shavings, to decorate  {optional}
Extra Fresh Raspberries, to decorate   {optional}

1.) Mix the Tennis biscuit crumbs and the melted Butter {add enough Butter to bind the crumbs well} - spoon onto the bottom of a 20 x 30cm pie dish and level - chill until needed.
2.) Beat the Cream Cheese until creamy, add the melted White Chocolate - beat well - add the Pudding and Milk - beat another minute until smooth - fold in the whipped Cream gently.
3.) Add the Fresh Raspberries and stir through - spoon the Cream Cheese mixture over the crust - decorate with White Chocolate shards/shavings and extra Raspberries {if using}
4.) Chill at least 6 hours or overnight.

Cut into squares and serve.
