Chocolate and Orange Marble Cake is a delicious, quick and easy sweet treat which you can have ready within an hour to serve as dessert or at tea time.

My son loves the combination of Chocolate and Orange, whereas I like some treats, and others not. For example, I would never buy a Chocolate and Orange slab for myself.

I like the two flavors a little more spaced out in a sweet treat and this cake is perfect. The Polenta gives the cake a coarse texture instead of soft as is usual with cakes.

It sure did make a difference which we found delicious.

If Polenta – or the whole coarser texture – does not appeal to you, use plain Flour instead.

Not more Self-Raising Flour, just replace the Polenta with Flour and add the Self Raising Flour as per the recipe.

The cake would then of course turn out much lighter and would not have the yellow tinge, which I actually like.

The Orange slices are simmered with the Syrup and thereby adds a lot of flavor.

Orange slices are also much softer and you can bend, press and arrange the slices nicely into the bottom of the pan. Mine is a single layer with about 3 or 4 slices overlapping the first layer.

You can really arrange them any way you like

I am always a little afraid that I might disturb the Orange slices when I run the knife through the batter and Chocolate and therefore I just about always end up with the marble effect more to the bottom of the cake.

Ingredients
  

Syrup:

  • 1 cup Caster Sugar Superfine Sugar
  • ½ cup Water
  • 1 t Vanilla Essence
  • 2 Oranges unpeeled, sliced

Cake:

  • 4 large Eggs
  • 1 cup Caster Sugar Superfine Sugar
  • 1 t Vanilla Essence
  • 1 cup Self-Raising Flour
  • 2 cups Polenta
  • ½ cup Dark Chocolate melted

Instructions
 

  • 1.) Pre-heat the oven to 180 deg C (350 deg F) – spray a bundt pan with cooking oil or grease very well
  • 2.) Syrup: Heat the Caster Sugar, Water and Vanilla – bring to the boil, stirring until the Sugar has dissolved – add the Orange slices – simmer 10 minutes, re-arranging the slices now and then – remove from heat and set aside
  • 3.) Cake: Beat together the Eggs, Caster Sugar and Vanilla until fluffy and thick – fold in the Flour and Polenta
  • 4.) Remove the Orange slices from the syrup {keep the syrup} and arrange them on the bottom and slightly up the wall of the prepared bundt pan (some might overlap) – pour the Cake batter over the Orange slices
  • 5.) Pour the melted Chocolate over the batter and use a butter knife to gently swirl through the Chocolate and Cake batter – bake 35 – 40 minutes or until a tester comes out clean
  • 6.) Let cool in the pan for 5 minutes – turn out onto a cooling rack to cool completely
  • 7.) Transfer to a serving plate and drizzle over the retained Syrup – heat a little if it has gone thick
