Baked Chicken Nuggets

I was going through my Pinterest boards the other looking for this recipe which I pinned from Kelli who blogs over at Kelli's Retro Kitchen Arts.

Has it ever happened to you where you know you pinned a certain recipe, but can not find it on any of your boards? Okay, if you do not fall into my that group of pinners, good for you! My boards need a make-over, that's for certain, especially stuff I pinned when I just started using Pinterest.

Anyway, fortunately I pinned this recipe recently, so it was fairly easy to find and I am so glad I tried it as Cheri loves chicken nuggets {especially those from McDonalds... yeah, yeah, I hear you!} and I decided to make these with some of my Coca-Cola Onion Rings, a dipping sauce and some salads.

{6 - 8 servings}

750g Chicken Fillets, cut into strips or chunks
2 cups Bread Crumbs
2 t Italian Herbs
1 cup Powdered Parmesan Cheese
2 t Salt
1 t Dried Basil

1 cup Butter/Margarine, melted, in a small bowl

1.) Pre-heat the oven to 220 deg C  (425 deg F) - line 2 baking sheets with baking paper.
2.) Mix the Bread Crumbs, Italian Herbs, Parmesan Cheese, Salt and Basil in a medium bowl.
3.) Roll the Chicken in the melted Butter and then in the Bread Crumb mixture - arrange in a single layer on the baking sheets - bake for 20 - 25 minutes until golden and the chicken is cooked.

Serve with a dipping sauce as a party snack or as a light dinner with sides of salads or vegetables.

  1. Ha!!! I make something very similar to this! My boys love it :) I like to make a bunch then freeze them - then all I have to do is reheat them!

    I will tell you, awhile ago, I went back through and reorganized all of my pins ..... what a nightmare! I wish I had known when I first started how addicting it would be and that I needed to better organize my boards!

  2. I am dreading having to go thru and organize my boards. It will probably take days :( These chicken strips are so easy, I would at least have a quick meal!!!

  4. My boards need a makeover too! These look great and here we can get bread crumbs with italian seasoning already mixed in!
