Bacon & Chicken on White Bread

With A Blast: Bacon & Chicken on White Bread  {great for lunch!}  #sandwiches  #chickensandwiches #chicken

These sandwiches taste as good as they look. And is best served on fresh, soft White Bread ... but, if you prefer a healthier bread. go for it ! 

This is a great way to use any leftovers or for the kids as a  very filling lunch {school or at home!}  Roy and Cheri, preferred their sandwiches without the Gherkins, but I totally love it, and if you do too - add as much as you like,,, it really does make a difference in taste.

I only served some oven baked fries with the sandwiches and that was more than enough for a late afternoon/early evening meal - of course followed by a delicious dessert ;-)


{6 portions}

500g Chicken Fillets, cooked and sliced  {whichever way you prefer - or leftovers}
250g Streaky Bacon, cooked crispy
12 slices White Bread  {or as per your preference}
6 TB Mayonnaise
6 Hardboiled Eggs, sliced
2 - 3 Firm Tomatoes, sliced
3 - 6 Gherkins, sliced
6 t Dijon Mustard

1.) Spread 6 slices of Bread, using 1 TB Mayonnaise per slice - place the sliced Chicken on top of the Mayonnaise - followed by the cooked Bacon strips - use one sliced Egg per sandwich and arrange the slices over the Bacon.
2.) Add the Tomato and Gherkin - spread the remaining 6 slices of Bread with 1 t Mustard per slice, and close the sandwiches.

Slice and serve !
