Apricot Chicken

With A Blast: Apricot Chicken {saucy!}  #chicken

Deliciously Apricot infused Chicken - I say "infused" as there are no actual apricots in this recipe, but it is cooked in Apricot juice which makes it an outstanding dish. 

This is another excellent recipe for a busy weeknight as you dump everything into an oven dish and bake.  I served this over Basmati rice with a side salad.  Served over noodles would be great too!

Saucy, saucy dish, which of course I love as I do not like rice on it's own, unlike Roy, who will eat any leftover rice as is - no sauce, no nothing - just the rice.

{6 - 8 portions}

8 Chicken Fillets, cut into chunks
Salt & Pepper, to taste
1 packet Brown Onion Soup Powder
1 Red/Purple Onion, sliced thinly
250g Mushrooms, quartered
2 cups Apricot Juice

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray an oven dish, with a lid, with cooking spray.
2.) Season the Chicken with Salt and Pepper - not too much, as the soup powder is already salty - place the Chicken in the bottom of the prepared oven dish.
3.) Sprinkle the Soup powder over the Chicken - followed by the Onion and Mushrooms - pour the Apricot juice over - give it a gentle stir {to break up the soup powder, but not to disturb the layers much}.
4.) Bake, covered, for 1 - 1 1/2 hours until the Chicken is fully cooked.

Serve as you wish - with rice/mashed potatoes/noodles and side salads or vegetables.
