Apple & Citrus CAKE

Easy Apple packed cake with a delicious Citrus addition

The recipe I am sharing with you today is a total delight !  The cake is soft and moist with soft Apple chunks and a very delicate Citrus taste.

I sliced the cake into medium slices, but then also sliced some the thickness of a slice of bread, which I packed for Dimitri to take to work with his lunch. I think a lot of the thinner slices would look great on a dessert table or at a party. 

A spoon or cake fork is not really necessary which makes it a great addition to a finger foods dessert table.

APPLE & CITRUS CAKE

{1 large ring cake}

2 cups Flour
1 t Baking Powder
1 cup Butter, softened
1 cup + 2 TB Caster Sugar
1 t Vanilla
4 Extra-Large Eggs
2 t Lemon or Lime Peel, grated
1 TB Lemon or Lime Juice
1 can (385g) Apples, drained and chopped smaller

1 cup Icing Sugar
2 TB Lemon or Lime Juice
1 - 2 TB Boiling Water
Extra lemon or Lime Peel, grated, to decorate

1.) Pre-heat the oven to 180 deg C (350 deg F) - spray a ring cake tin {I used a silicone mould} with cooking spray.
2.) Sift together the Flour and Baking Powder in a medium bowl - keep aside.
3.) Cream together the Butter and Caster Sugar - add the Vanilla - beat to mix - add the Eggs one at a time, beating well after each addition - stir in the Lemon or Lime Peel and Juice.
4.) Gently fold in the Apple pieces - pour the batter into the prepared cake tin - bake for 50 - 60 minutes until a toothpick comes out clean - transfer to a cooling rack and cool completely.
5.) Mix together the Icing Sugar and Lemon or Lime Juice - add just enough Boiling Water to get a smooth, slightly runny consistency.
6.) Pour the Icing over the cake and sprinkle with extra Lemon or Lime peel.

Great as a dessert or a teatime treat !
