Minty Caramel Bars

With A Blast : Minty Caramel Bars

I am addicted to anything caramel - can't say no at all!  The other day I craved caramel, and if I had a can on hand, I would have eaten it straight as is.

But, it was already afternoon and I thought I'll work my craving into the evenings dessert, which was 100% the correct choice as this turned out to completely stop my craving and was loved by Roy and the boys as well.  

So, the caramel was added onto the list for the daily stuff from the supermarket.  I made this thinnish, using a baking sheet and not the ordinary pie dishes - it is up to you whether you want it thin or thick, but remember thicker takes a little longer to set.


{16 - 20 servings}

2 cans (397g each) Caramel Condensed Milk
1/4 cup Lemon Juice
1 cup Fresh Cream, stiffly beaten   {whipping cream/double cream}
1 1/2 packets (200g packets) Tennis biscuits   {this can be subbed with Graham Crackers}
Large Peppermint Crisp Chocolate Bar, grated

1.) Beat the Caramel Condensed Milk and the Lemon Juice together  - put aside while you line a baking sheet or prepare a pie dish - place a layer of Tennis biscuits on the bottom of the sheet/dish.
2.) Fold the whipped Cream into the Caramel and spoon half of the mixture over the layer of biscuits - repeat the layer of biscuits, followed by the remaining Caramel.
3.) Sprinkle the Peppermint Crisp over and chill for at least 2 hours before serving.

Simple, but so delicious !
