Fruity Coleslaw

With A Blast: Fruity Coleslaw  {kids love this!}  #salad

Kids love this salad, and so do the adults.  We all have our favorite recipe or a recipe which has been handed down the family, and we all, at some stage, try to copy our favorite restaurant's version.

I found this recipe, years ago, in my ever trusting EENSKOTTELTREFFERS recipe book, which over time I adjusted more to our preference.  I am not crazy over coleslaw which is drenched in dressing, it must still be crispy and if you make it ahead of time, it shouldn't go soggy.

This recipe is exactly that - crunchy, no sogginess and always a hit.


{6 - 8 portions}

3 cups Cabbage, finely sliced
1/2 cup Raisins
1 Pineapple, peeled and grated
1 cup Carrots, finely grated
1/4 cup Mayonnaise
1 TB Sweetened Condensed Milk
1 TB Milk

1.) Mix the Cabbage, Raisins, Pineapple and Carrots in a mixing bowl.
2.) Combine the Mayonnaise, Condensed Milk and Milk - pour over the Cabbage mixture and stir to mix.

Transfer to a serving dish or chill until you are ready.
