Coconut & Jam Pull-Apart Wheel

I normally have very bad luck with making wheels, pin wheels or whatever else {especially Cinnamon Rolls!} - it just does not seem to work for me.

The recipe I am sharing today worked out just fine {I had my doubts for a little while ..}. It was delicious and soft, very similar to something between a cake and a scone.  

Pulling the pieces apart was also easy, unlike my previous attempts with baking rolled up doughs.

I used a spring-form baking pan and it was easy to remove the whole ring at once.


{10 - 12 servings}

3 cups Self-Raising Flour
1/2 t Salt
30g Butter, cut into small cubes
1/3 cup Caster Sugar
1 Extra-Large Egg, beaten
2/3 cups Milk
1/2 cup Strawberry Jam
1/2 cup Coconut
Icing Sugar, for dusting

1.) Pre-heat the oven to 220 deg C (425 deg F) - line the bottom of a spring-form pan and spray with cooking spray.
2.) Mix the Flour and Salt - rub the Butter in with your finger tips - stir in the Caster Sugar.
3.) Combine the Milk and Egg - make a well in the center of the Flour and pour all the Milk in at once - mix quickly to form a soft dough - turn onto a well floured board - knead lightly and form a rectangle about 1.5 centimeters thick.
4.) Warm the Jam to make it more spreadable - add the Coconut and mix - spread over the dough and roll up like a Swiss Roll - cut into 2 centimeter slices and place cut size up in the prepared pan - glaze with a little Milk.
5.) Bake 15 - 20 minutes - remove from the oven - let cool for a few minutes and transfer to a cooling rack.

Dust with Icing Sugar.

Best served warm, but cold is just as delicious!
