Chocolate Rice Pudding Cake

Seems I am into unusual cakes these days - the other day I shared my Coconut Marshmallow Cake and today it is a Chocolate Rice Cake.  

I only have two large loose bottom cake tins and thought it would not turn out right, but actually it turned out just fine. The cake is quite filling and if you look at the slice in the pic above... well, that is enough for 2 servings.

We had it cold, but I heated a small piece - just to test - and it was just as delicious, a little looser, but that's about it.

I haven't had rice pudding in some time and wanted to make some, when I came across this recipe from the Huisgenoot magazine's website.


12 - 18 servings

8 cups Milk
1 Cinnamon stick
2 cups Sugar
2 cups White Rice, raw
2 TB Water
1 t Gelatin
100g Ground Almonds
2 t Vanilla
180g Dark Chocolate
White Chocolate, grated, to decorate

1.) Spray a loose bottom cake tin with cooking spray.
2.) Place the Milk, Cinnamon stick, Sugar and Rice in a large pot - cook until the rice is done and slightly sticky - put aside to cool {but not to go cold}
3.) Sprinkle the Gelatin over the Water in a small microwavable bowl until spongy - microwave about 10 seconds on HIGH  - the Gelatin must be clear and dissolved.
4.) Remove the Cinnamon stick from the rice, add the Gelatin, Almonds and Vanilla - stir to mix.
5.) Divide the mixture in two parts - one part must be 2/3 and the other 1/3.
6.) Melt the Dark Chocolate and add to the 2/3 portion - mix well.
7.) Pour half of the Dark Rice Pudding into the prepared cake tin - add all of the White Rice Pudding and top with the remaining Dark Rice Pudding - gently press into place - chill at least 3 hours or overnight before serving.

Turn out on a serving plate and decorate with the grated White Chocolate.
