Chicken & Ginger Stir-Fry


I am quite a fan of stir-fries, tender meat and crunchy vegetables on a bed of rice or, now and then, noodles, especially when it has an Asian taste to it.

Best of this recipe {besides eating} is the smell of Sesame Oil !  I just love that smell, almost peanut butter but a little more and the taste is unbeatable when compared to other cooking oils.

You can change/add or leave out any of the vegetables and use either what you have on hand or to your family's preference.

The different pastes in the recipe makes it special - I used the finest crushed Garlic I could find and it turned out excellent  {could not find Garlic paste ...}

CHICKEN & GINGER STIR-FRY

{4 servings}

750g Chicken Fillet, cut into strips
Salt & Freshly Ground Black Pepper
2 TB Vegetable Oil
2 TB Sesame Oil
1 TB Ginger paste
2 t Garlic paste    {or finely crushed}
1/2 cup Carrots, cut into julienne strips
1/2 cup Young Green Beans, ends removed 
1/2 cup Baby Corn, chopped into bite sized pieces
1/2 cup Butternut, cut into julienne strips
1/2 cup Sugar Snap Peas  {snow peas}
2 TB Coriander paste
1/4 cup Oyster Sauce

1.) Season the Chicken strips with the Salt & Black Pepper - heat the Vegetable Oil and cook the Chicken until done - remove from pan and keep aside.
2.) Using the same pan - heat the Sesame Oil - add the Ginger- and Garlic pastes - cook 20 seconds - add all the vegetables - stir-fry 8 - 10 minutes until just tender, but still crispy - add the Coriander paste and the Oyster Sauce - stir through.
3.) Add the Chicken back to the pan with the vegetables - cook on medium until heated through.

Serve on a bed of rice or noodles.

  5. Thanks for sharing this recipe, I really want to cook this because this is my favorite food. I make also my own Recipe for Stir Fry Sauce and add to it and it was very delicious.
