Pineapple Chicken & Gingered Rice

I love sweet and sour dishes and the recipe I am sharing today has a spiciness as well.  The rice is ginger flavored and we really enjoyed it this way.

It makes a lovely sauce which is of course always welcome with rice and there is plenty!

Since we started with the new room for Dimitri, I mostly prepared quick and easy dishes, as every day it feels like we're not getting anywhere, but time flies and before I know, it is dinner time.

Pineapple Chicken & Gingered Rice

{serves 4 - 6}

1 cup Basmati Rice {white or brown}
2 t Freshly grated Ginger
2 TB Freshly chopped Basil or Coriander

2 TB Cornflour
1/4 cup Cider Vinegar
1/4 cup Tomato Sauce
2 TB Brown Sugar
2 TB Soy Sauce
1/2 cup Pineapple Juice
2 TB Oil
1 Onion, cut into wedges
3 t Garlic, crushed
1 Red Bell Pepper, cut into thin strips
6 Chicken Fillets, cut into strips
1 Pineapple, peeled and cut into small cubes

1.) Add the Ginger to the Rice - prepare as per the instructions on the packet - once done, stir through the chopped Basil or Coriander.
2.) Meanwhile, mix the Cornflour, Cider Vinegar, Tomato Sauce, Brown Sugar, Soy Sauce and Pineapple Juice in a small bowl - set aside.
3.) Heat the Oil in a large wok or pan - Saute the Onion and Garlic for a minute - add the Red Bell Pepper - stir fry another 2 - 3 minutes - add the Chicken strips and the Pineapple cubes - cook another 3 minutes, stirring regularly.
4.) Add the Sauce in step 2 to the wok or pan - stir through and simmer until all is cooked and the Chicken is done.

Serve with the Gingered Basmati Rice.
