Lemon Lime Cream Pie

This is such a creamy pie, total delight in every bite!  I only wished I made the crust a little thicker, so much creaminess need a good crunch to it as well.

It was still delicious, after all, we are all after the pie-filling aren't we?  We had a rich dinner and this dessert was just right and not that tardy at all.

A few weeks ago, I mentioned in one of my posts that I'd seen Tennis Biscuits {which we use as bases for lots of desserts in South-Africa} being available, already crumbed now. Well, our local supermarket finally stocked up ! No more mixer and the additional dirty dishes.

I am not being paid {or advertising the product} for mentioning and adding a photo to this post.  It is merely to show readers, who have access to Tennis Biscuits, that there is a new product on the market. {Use what you need and it has a re-sealable zipper, to use leftovers next time} 

Right, let's get on with today's recipe:

Lemon Lime Cream Pie

6 - 8 servings

200g Tennis Biscuit Crumbs {or Graham Cracker Crumbs}
1/3 cup Butter, melted
1 box Lime Jelly  {Jello}
1/2 cup Boiling Water
1 can (410g) Evaporated Milk, chilled overnight
1/4 cup Lemon Juice
1 cup Sugar

Extra Biscuit Crumbs to top  {optional}

1.) Mix the Tennis Biscuit crumbs and the Butter - press into a 20 x 20cm pie dish bottom.
2.) Dissolve the Lime Jelly in the Boiling Water and put aside to cool slightly.
3.) Beat the Evaporated Milk until stiff and peaks are forming - add the Lemon Juice and the Sugar at regular intervals, followed by the dissolved Jelly - keep beating until well combined - pour onto the crust.
4.) Sprinkle more Biscuit crumbs over {if using} - Chill at least 4 hours or overnight.

Serve and enjoy !
