Kung Pao Chicken Sliders & Crunchy Coleslaw



Today I am sharing with you a recipe which we enjoyed a lot. I found a recipe, on Mom On Timeout's site, but once again, I had to adapt as I could not find all the ingredients.  I also cooked the chicken in my pressure cooker, as it is a lot quicker {and you get the same results as when it has cooked for hours in the slow cooker - tender and juicy}. The chicken was grilled in the original recipe.

The chicken and the coleslaw balance each other out very nicely as the one is hot and the other crunchy and fresh. So, if you do make this, serve them together, it really is worth it.

Kung Pao Chicken Sliders & Crunchy Coleslaw

{original recipe which you can find HERE adapted by me}

{6 servings}

1 pouch Kung Pao Stir-Fry Sauce
2 TB packed Brown Sugar
3 TB Orange Juice
2 t Garlic, crushed
2 t Ginger, crushed
1/2 t Paprika
500g Chicken Fillets, cooked and shredded with a fork
3 cups Coleslaw Mix
1/4 cup Mayonnaise
6 Buns

1.) Combine the Kung Pao Sauce, Sugar, Orange Juice, Garlic. Ginger and Paprika in a large pan - bring to the boil on medium heat, stir-fry until the Sugar has dissolved - remove from heat - place 2 TB of the sauce in a medium bowl.
2.) Add the shredded Chicken to the remaining sauce in the pan and re-heat if necessary.
3.) Add the Coleslaw and Mayonnaise to the reserved sauce in the medium bowl - stir to combine.

Serve the Kung Pao together with the Coleslaw on the Buns.
