Roasted Spice Mashed Potatoes

I guest posted over at Love Bakes Good Cakes , where I shared this recipe for mashed potatoes last week.

Re-posting for any of you who might have missed it on Jamie's blog.

If you are tired of the same boring mashed potatoes every time, try this recipe ... it is full of flavor and only takes a couple of minutes longer.

Roasted Spice Mashed Potatoes



1.5 kg Potatoes, peeled and cut into chunks
3 TB Butter
100 - 200ml Milk
Salt & Freshly Ground Black Pepper, to taste

2 TB Olive Oil
2 t Coriander Seeds
2 t Cumin Seeds
2 Whole Star Anise
1 Whole Cinnamon Stick

1.) Boil the Potatoes in lightly salted water until soft - Drain and mash - Add the Butter and some of the Milk until you get your preferred consistency. Season with Salt & Pepper {not too much - the roasted spice must still be added - you can always add more Salt & Pepper just before serving}
2.) Whilst the Potatoes are boiling - heat the Olive Oil in a small saucepan - add the Coriander, Cumin, Star Anise and the Cinnamon stick.

3.) Sizzle the spices over medium heat for 2 - 3 minutes {it blackens quite quickly - that is fine} - remove from heat.

4.) Steaming hot as you can see above !  - Remove the Cinnamon Stick and the two Star Anise - place the remaining Oil and Spices in a mortar and pestle {or anything similar}

5.) Grind the Oil and Spices until you get a smooth paste.

6.) Stir the Roasted Spices into the Mashed Potatoes and adjust the seasoning, if necessary.

Serve with meat and vegetables.

  4. Love the spices you put in the mashed potatoes. I put similar spices in roasted potatoes but never thought about mashed. I can just imagine how good they taste. Thanks for sharing on Thursdays Treasures.
